Lemon Rice


Lemon Rice is a zesty and tangy South Indian dish made by combining cooked rice with a flavorful mixture of lemon juice, aromatic spices, and tempering ingredients. It is a refreshing and light rice preparation that is loved for its vibrant flavors.

To prepare Lemon Rice, cooked rice, preferably leftover rice, is used as a base. The rice grains are cooled to room temperature or refrigerated before use to ensure that they are separate and not mushy.

In a pan, oil or ghee (clarified butter) is heated, and mustard seeds, cumin seeds, and dried red chili are added for tempering. Curry leaves, peanuts, and optionally cashews are then added and sautéed until they turn golden brown and aromatic.

Next, turmeric powder and asafoetida (hing) are added for flavor and color. The cooked rice is then added to the pan and gently mixed with the tempering ingredients, ensuring that the rice is coated evenly.

Lemon juice is squeezed over the rice and mixed well to impart a tangy and refreshing taste. Salt is added to taste, and the rice is stirred gently to incorporate all the flavors without breaking the rice grains.

Lemon Rice is often garnished with fresh coriander leaves or grated coconut for added freshness and visual appeal. It can be enjoyed as a standalone dish or served with yogurt, raita, or pickles.
